Upgrade steps - 10.3.1 to 11.1a

I am trying to plan the upgrade for our existing Windows 10.3.1 environment to a Windows 11.1a environment. Ideally I would like to upgrade the servers first and then upgrade the clients as time allows. We have two primary servers and one imaging server. I am aware of the SQL 2008 R2 pre-requisiste and the upgrade will involve moving the database to this new server. I already have the documentation for this part.

Any suggestions, advice, gotchas, etc.?
