Add SSID then Take old one out?

I am planning a new wireless network upgrade with new numbering for the networks. Part of the request from my teachers is to have wireless projection from the iPad's. Since my current network setup prevents me from doing this across route and I may have to wait to setup the new network until mid-2014 I am looking at moving some of the iPads onto the WLAN the laptops they use are on to allow the projection. My question is whether I can create a new WLAN within ZMM have it deploy out to the end devices then remove the old network from the device? I programmed the iPads using Apple Configurator but was hoping that it wouldn't be neccessary to bring the iPads back in just for this change.
